Pasta with Lamb, Olives and Feta Cheese

Delicate pasta with spicy lamb, olives and feta cheese - now that's soulfood!

Ingredients - serves 4
400g pasta
200g feta cheese
1 onion
2 garlic cloves
200g black olives
300g lamb filet
200ml veggie soup
1 tbsp. chopped thyme
1 tbsp. tomato puree
Some olive oil
salt and pepper
Method
Peel onion and garlic and chop finely. Cut olives into rings. Cut lamb filet into small cubes. Heat some olive oil in a pan and roast lamb from all sides. Remove the lamb from the pan and set aside.
Add some more oil to the pan and add in onions and garlic and cook for 1 minute until glassy. Add the soup to the pan. Stir in tomato puree and then add in thyme. Stir well and let simmer for 2 Minutes. Now add in olives and the lamb and let simmer for another 5 minutes. Crumble the feta cheese with your hands.
Cook the pasta in plenty of well salted water. Then toss the pasta into the sauce. Season well with salt and pepper. Serve with crumbled feta cheese.
