Pasta with Zucchini and Ricotta

So easy, so delicious - this quick and easy pasta recipe is all you need for a quick and easy dinner fix!

Ingredients - serves 2

1 zucchini

200g penne

125g ricotta

Some olive oil

Salt and pepper

Method

Cook the pasta in plenty of salted water. Wash zucchini and cut into cubes. Heat some olive oil in a pan, add in the zucchini and roast for 2 minutes. Add in ricotta, pasta and 100ml of pasta water and combine. Season well with salt and pepper.
