Pastasotto with Tomatoes

It is like a risotto but with pasta - this delicious pasta dish is all you need, when craving for pasta. Delicate pasta, fresh tomatoes, crunchy pine nuts and loads of parmesan cheese!

Ingredients - serves 3
300g Kritharaki (greek pasta)
250ml veggie stock
200ml pureed tomatoes
2 tomatoes
1 onion
1 garlic clove
70g butter
50g fresh parmesan cheese
1 tbsp. pine nuts
salt & pepper
Method
Wash tomatoes, remove stones and cut into cubes. Peel onion and garlic and chop finely. Heat 35g butter in a pan. Add in onions and garlic and cook for 2 minutes. Mix veggie stock and pureed tomatoes.
Add in the pasta and cook for another minute. Now add in a quarter of the tomato-veggies stock mix. Cook and stir every now and then. Add in more veggie stock as soon the stock is soaked up by the pasta. Continue until the veggie stock is all gone. Now add in the tomatoes and mix well. Fold in remaining butter and parmesan cheese. Serve with fresh herbs.
