Porcini Ragout

Fresh porcini are full of flavours! They taste even better, when collected by yourself. This quick and easy ragout is the absolutely delicious reward for all your efforts! Go and get a basket, get out into the woods and give it a try!

Ingredients - serves 2
400g fresh porcini
200ml heavy cream
1 small onion
1 tsp. thyme
1 garlic clove
150ml vegetable stock
30g butter
salt & pepper
Method
Start by cleaning the mushrooms with a knive and a brush - try to avoid washing them, they soak up with water and lose flavour! Peel onion and garlic clove and chop finely.
Heat up butter in a pan until frothy. Add onions and cook until translucent. Add porcini and stir-fry for 2 minutes. Add in heavy cream, veggie stock, garlic and thyme, combine and let cook until creamy. Season well with salt and pepper & serve with dumplings or bread.
