Here's a cozy, flavorful recipe for Pumpkin Soup with Gorgonzola - creamy, savory, and perfect for chilly days!

Ingredients - serves 2
1 small Hokkaido
1 onion
0,5l veggie broth
100g Gorgonzola
Pumpkin seeds
Some olive oil
Salt and pepper
Nutmeg
Method
Wash pumpkin and remove seeds. Afterwards cut the pumpkin into cubes. Peel onion and chop finely. Heat some olive oil in a pot, add in onion and let cook until translucent.
Now add in the pumpkin and veggie broth. Let cook on medium heat until the pumpkin is soft. Puree until smooth and season well with salt, pepper and nutmeg.
Let cook for 20 minutes. Serve with crumbled gorgonzola and pumpkin seeds.
