Quiche with Ham & Leek

Aromatic ham and crisp leek - those two are a dreamteam, when served as a quiche! You will love this quick and easy quiche recipe!

Ingredients
200g flour
100g butter
5 eggs
300g leek
250gHam
250g sour cream
150g grated cheese
2 tbsp. chopped herbs
salt & pepper
Method
Mix flour and a pinch of salt in a bowl. Add butter in pieces, 2 tbsp. cold water and 1 egg and quickly work into a smooth dough with your hands. Wrap up dough in plastic wrap and let rest in fridge for at least 30 minutes. Roll out the dough on a flour dusted surface. Transfer the dough into the tarte tin and press down with your fingers gently.
Heat the oven to 180°C. Wash leek and cut into slices. Chop ham roughly. Heat some oil in a large pan, add in ham & leek and cook for 3 minutes. Remove from the heat and set aside. Spread ham & leek on top of the dough.
Mix eggs and sour cream. Add in 100g of grated cheese and herbs. Season well with salt and pepper. Pour the mix on top of the ham and spread the remaining cheese on top. Bake the quiche in preheated oven for about 45 minutes. Remove quiche from the oven and allow to rest for 5 minutes.
