Quiche with Spinach and Feta Cheese

Quiche-tastic! A deliciously crsipy crust, spinach and tasty feta cheese - a handul pine nuts add some extra flavour!

Ingredients
200g flour
100g butter
3 eggs
400g frozen spinach
150g feta cheese
1 small onion
200g crème fraîche
250g sour cream
some nutmeg
100g grated mozzarella cheese
1 handful pine nuts
some olive oil
salt & pepper
Method
Mix flour and a pinch of salt in a bowl. Add butter in pieces, 2 tbsp. cold water and 1 egg and quickly work into a smooth dough with your hands. Wrap up dough in plastic wrap and let rest in fridge for at least 30 minutes.
Roll out the dough on a flour dusted surface. Transfer the dough into the tarte tin and press down with your fingers gently. Peel onion and chop finely. Heat some oil in a pan and cook onion until translucent. Add frozen spinach and cook until all the water from the spinach is gone. Crumble feta cheese with your fingers.
Heat the oven to 180°C. Beat up remaining eggs, crème fraîche and sour cream and season well with nutmeg, salt and pepper. Spread spinach and feta cheese on the tarte crust and fill up with the egg mixture. Spread grated cheese and pine nuts on top and bake in preheated oven for about 40 minutes until golden brown. Serve with fresh salad greens or creamy cucumber salad.
