Here is a quick and easy Salmon in Creamy Lemon Sauce with Pasta recipe, you need to try!

Ingredients- serves 2
2 salmon fillets
150–200 g short pasta
1 tbsp butter or olive oil
1 Tbsp. tomato puree
150 ml heavy cream or crème fraîche
50 ml vegetable or fish stock
1 tsp lemon zest
1–2 tsp lemon juice
1 tsp Dijon mustard (optional)
Salt & pepper
Fresh dill, for serving
Method
Boil pasta in salted water until al dente. Drain, reserving a small cup of pasta water.
Heat butter/oil in a pan. Sear the salmon for 3–4 minutes on the first side.
Flip and cook another 2–3 minutes, depending on thickness.
Remove from the pan and keep warm.
In the same pan, add in tomato puree and cook for 1 minute.
Add cream and stock. Stir in lemon zest, lemon juice, and Dijon mustard.
Let it simmer for 2–3 minutes to thicken. Season with salt and pepper.
Add the cooked pasta to the sauce and toss well.
Add a splash of pasta water if the sauce becomes too thick.
Plate the pasta. Place the salmon on top. Garnish generously with fresh dill.
