Sicilian Panelle

Panelle are a popular street food in Palermo, made from chickpea flour. They are traditionally served between two slices of bread and eaten on the go. They are also absolutely delicious when served with various dips - you definitely need to try!

Ingredients - serves 4


250g chickpea flour

750ml water

1/2 bunch parsley

salt and pepper

oil



Method

Mix chickpea flour with water and combine - try to avoid lumps. Season well with salt and pepper. Wash parsley and chop leaves finely.


Pour chickpea mixture into a pot and bring to a boil. Keep stirring until it thickens. Line a baking sheet with parchment paper. Add parsley to the pot, stir well and pour the mixture onto the baking sheet. Allow to cool off and cut into pieces.

Heat up plenty of oil in a large pan. Fry panelle from both sides, until golden. Serve traditionally with bread or with dips for snacking.
