Strawberry Cheesecake Dumplings

Ingredients - serves 3
The dumplings:
100g cream cheese
100g semolina
60g bread crumbs
1 tsp. vanilla extract
200ml milk
1 egg
1 egg yolk
30g butter
Additionally:
100g graham crackers
30g sugar
30g butter
300g strawberries
4 tbsp. sugar
150ml heavy cream
Method
Heat butter, milk and vanilla extract in a small pot and bring to a boil. Stir in cream cheese and semolina and combine. Remove pot from heat and allow to cool off a little. Add egg and egg yolk and mix well. Now fold in bread crumbs, cover and let rest in the fridge for at least 30 minutes.
In the meantime, wash strawberries and cut into quaters. Heat strawberries with 3 tbsp. sugar and 2 tbsp. water in a pot and bring to a boil. Simmer at medium heat for 5 minutes. Remove pot from heat and blend until smooth.
Crumble graham crackers with your fingers and blend with a food processor. Melt butter, mix with sugar and fold into the crackers. Beat up heavy cream with 1 tbsp. sugar until stiff and keep in the fridge.
Bring plenty of slightly salted water in a large pot to a bowl. With flour dusted hands, form 6 small dumplings from the batter. Let dumplings simmer at medium heat for 12 minutes. Serve with cracker crumble, whisked cream and strawberry sauce.
