Strawberry Galettes

Never get enough of strawberries? Then you'll love this delicious recipe! Sweet strawberries and soft pastry - so easy and so delicious!

Ingredients for 6 pieces
500g strawberries
300g flour
1 egg
150g cold butter
2-3 tbsp. cold water
a pinch of salt
6 tbsp. sugar
1 tsp. vanilla extract
1 egg yolk
some milk
some icing sugar
some almond flakes
Method
Wash strawberries, remove stem and cut into slices. Mix strawberries with 3 tbsp. sugar and vanilla extract in a bowl. Mix flour, salt and remaining sugar in a bowl. Add in egg, cold butter and cold water and work into a smooth dough with your fingers quickly. Wrap it up in plastic wrap and store in the fridge for at least 30 minutes. Line a baking tray with parchment paper and heat the oven to 200°C.
Remove the dough from the fridge, punch down and seperate to 6 pieces. Roll out the dough balls and place some of the strawberries in the middle of each - spare out a 3 cm edge. Fold the edges to the middle. Beat up yolk with some milk and brush the galettes with egg wash - sprinkle with almond flakes. Bake in preheated oven for about 30 minutes, until golden brown. Allow to cool and dust with icing sugar.
