Strudel with Spinach and Feta Cheese

Here's a delicious and easy Strudel with Spinach and Feta Cheese recipe — flaky, savory, and perfect for lunch, dinner, or a party appetizer.

Ingredients - serves 4


300g frozen spinach

1 onion

3 garlic cloves

200g feta cheese

2 pkg. strudel or filo dough

1 egg yolk

50g seeds (sunflower, pumpkin etc.)

30g melted butter

a dash of milk

some nutmeg

200g sour cream

4-6 twigs fresh herbs of your choice

olive oil

salt and pepper





Method


Defrost spinach and drain by squeezing with your hands. Chop spinach roughly. Peel onion and 2 garlic cloves and chop finely. Heat some olive oil in a pan. Add in onions and cook until translucent. Add garlic and braise for another 2 minutes. Add spinach to the pan and cook until the remaining water from the spinach is gone. Season well with salt, pepper and nutmeg.


Set spinach aside and allow to cool a little. Grease each dough sheet with butter and fold into halves starting at the long side near you. Place some filling on the dough sheet, fold up the edges and roll up to small strudels. Repeat with the remaining strudels.


Heat oven to 180°C. Heat a pan without oil and roast the seeds in the hot pan. Beat up the yolk with a dash of milk and brush the strudels with egg wash. Spread the seeds on top of the strudels and bake in preheated oven for about 20 minutes, until golden brown.


In the meantime, wash the herbs and chop finely. Peel remaining garlic and chop finely. Mix sour cream with some olive oil and 1 tbsp. water. Mix in chopped herbs and season well with salt and pepper. Serve strudels with sour cream.
