Here is an easy and delicious Stuffed Chicken Breast with Sun-Dried Tomatoes & Mozzarella recipe!

Ingredients - serves 2
2 chicken breasts
100 g (3.5 oz) mozzarella, diced (buffalo mozzarella preferred)
6 sun-dried tomatoes in oil, finely chopped
1–2 garlic cloves, minced
Salt & pepper
1 tsp paprika
1–2 tbsp olive oil
Method
Dice the mozzarella. Finely chop the sun-dried tomatoes and garlic. Mix everything and season lightly with salt & pepper.
Slice each chicken breast on the side to create a pocket. Season inside and outside with salt, pepper, and paprika. Spoon the mozzarella–tomato mixture into the pocket.
Close with toothpicks if needed.
Heat olive oil in a skillet. Sear the chicken breasts for 2–3 minutes per side until golden brown. Preheat oven to 180°C / 350°F. After searing, transfer chicken to a baking dish.
Bake for 10–15 minutes, until cooked through but still juicy.
