Super Simple Tray Bake with Plums

This super easy tray bake brings back all the childhood memories! Simple sponge cake, sweet fruits and crunchy almonds on top - this easy fruit cake is super soft and tastes heavenly delicious!

Ingredients
700g plums
250g soft butter
250g all-purpose flour
240g sugar
4 eggs
1 tsp. vanilla extract
2 tsp. baking powder
70g sliced almonds
some icing sugar
Method
Start by washing the plums, remove stones and cut into quarters. Beat up eggs, 180g sugar and vanilla extract. Add in the soft butter and whisk for 2 minutes. Mix flour and baking powder and fold in carefully.
Heat oven to 180°C. Line a baking tray with parchment paper and spread the batter on the baking tray. Smooth down and spread half of the plums on the batter. Push down gently and spread the rest of the fruits on top. Spread the remaining sugar on top and finish by spreading the almonds on top evenly.
Bake in preheated oven for about 40 minutes, until golden brown. Allow to cool and dust with icing sugar.
