Tarte Flambée with goat's cheese and peaches

The mouthwatering combination of goat's cheese and peaches brings along all the flavours! Sweet fruits and aromatic cheese - the perfect snack for a lazy summer evening with your friends!

Ingredients
180g all purpose flour
1 egg
2 tbsp. crème fraîche
2 peaches
1 tbsp. pine nuts
100g goat's cheese
2 tsp. honey
1 twig rosmary
some olive oil
salt and pepper
Method
Mix flour, egg, olive oil, a pinch of salt and 2 tbsp. cold water in a bowl and work into a smooth dough. Wrap the dough up in plastic wrap and let rest in the fridge for at least 30 minutes.
Heat oven to 240°C. Line a baking tray with baking parchment. Roll out dough on a flour dusted surface and transfer onto the baking tray.
Spread crème fraîche on the dough. Remove stones from peaches and cut peaches into thin slices. Crumble goat's cheese with your fingers. Spread goat's cheese, peaches and pine nuts on top.
Bake in preheated oven for about 15 minutes. In the meantime wash and dry rosmary, remove leaves and chop finely. Take out tarte flambée, season well with salt and pepper and spread rosmary and honey on top. Cut into pieces and enjoy!
