Tarte Flambée with Goat's Cheese, Rosemary and Honey

A crispy crust, aromatic goat's cheese and sweet honey. Topped with fresh rosemary this tarte flambée is definitely worth trying!

Ingredients
220g flour
1 egg
some olive oil
2 tbsp. crème fraîche
1 small red onion
100g soft goat's cheese
1 tbsp. pine nuts
1 twig rosemary
2 tsp. honey
salt and pepper
Method
Mix flour and salt in a bowl. Add egg, a dash of olive oil and a dash of water and combine. Work into a smooth dough, cover and let rest in the fridge for 30 minutes.
Heat oven to 240°C. Line a baking sheet with parchment paper. Roll out dough on a flour dusted surface and transfer to the baking sheet. Cut goat's cheese into slices. Peel onion and cut into thin slices.
Spread crème fraîche on the dough with a spoon. Layer goat's cheese and onions on the tarte and season well with salt and pepper. Bake in preheated oven for about 10 minutes, until crust turns golden brown.
In the meantime, wash rosemary and chop finely. Shortly before the tarte is ready, spread pine nuts and rosemary on top. Sprinkle tarte with honey and cut into slices.
