Tarte Flambée with Smoked Salmon

A crispy tarte with fine smoked salmon on top - the ideal snack!

Ingredients
180g flour
1 egg
1 dash of olive oil
2 tbsp. crème fraîche
200g smoked salmon
1 tbsp. herbs
salt and pepper
Method
Mix flour and salt in a bowl. Add egg, a dash of olive oil and a dash of water and combine. Work into a smooth dough, cover and let rest in the fridge for 30 minutes.
Heat oven to 240°C. Line a baking sheet with parchment paper. Roll out dough on a flour dusted surface and transfer to the baking sheet.
Stir together crème fraîche an herbs and coat the dough with crème fraîche. Bake in preheated oven for about 10-15 minutes, until golden brown. Remove from the oven and spread the smoked salmon on top. Season well with salt and pepper to taste.
