The Best Apple Cake

You will love this classic apple cake! Delicate shortcrust pastry, juicy apples and crunchy nuts - this apple cake is insanely good. The perfect cake for your next afternoon tea!

Ingredients
600g flour
300g softened Butter
200g sugar
1 tsp. baking powder
1 egg
6 apples
100g raisins
100g grounded hazelnuts
1 tsp. cinnamon
2 tsp. vanilla extract
juice of a lemon
a pinch of salt
1 egg yolk
a dash of milk
Method
Mix flour, butter, 100g sugar, salt, baking powder and egg in a bowl and quickly work into a smooth dough with your fingers. Wrap up in plastic wrap and store in the fridge for at least 30 minutes. Peel apples, remove seeds and shred. Mix with raisins, nuts, remaining sugar, lemon juice and cinnamon. Remove dough from the fridge and cut into thirds. Roll out two thirds on a flour dusted surface. Line a baking tray with parchment paper.
Transfer the rolled out dough to the baking tray and form higher edges with your fingers. Spread the apple filling on to the dough. Roll out the remaining dough on a flour dusted surface and cut into stripes. Put the dough stripes onto the cake crosswise and form a lattice. Press down the edges with your fingers. Beat up the egg yolk with a dash of milk and brush the cake with egg wash. Bake in preheated oven for about 40 minutes, until golden brown.
