The Best Blueberry Muffins

Sweet blueberries and crispy crumbles - this delicious blueberry muffin recipe is all you need!

Ingredients for 12 muffins
250 ml buttermilk
100 ml Oil
2 eggs
100 g sugar
1 tsp. vanilla extract
zest of half a lemon
1,5 tsp. baking powder
250 g flour
150 g blueberries
For the streusel:
75 g cold butter
75 g sugar
100 g flour
1 tsp. vanilla extract
Method
Heat the oven to 160°C. Line a muffin baking tray with paper. In a large bowl stir together the buttermilk, the oil, the eggs and the sugar. Add in the vanilla extract. Mix flour and baking powder and add into the bowl. Mix well. Wash the blueberries and fold into the batter carefully.
For the streusel mix flour, sugar, vanilla extract and sugar and crumble with your fingers. Transfer the batter into the muffins baking tin. Add the crumbles on top and bake in preheated oven for about 30 minute. Remove from the oven and allow to cool off completely before removing the muffins from the tin.
