Tortellini Pasta Salad

Delicious pasta with fresh rocket salad, delicate tomatoes and crunchy pine nuts - perfect for your summer lunch!

Ingredients - serves 2
250g tortellini pasta
125g rucola salad
150g cherry tomatoes
50g grated parmesan cheese
2 tbsp. pine nuts
olive oil
balsamic vingear
salt & pepper
Method
Cook tortellini until al dente. Wash rucola salad and let dry. Wash tomatoes and cut into halves. Allow cooked tortellini to cool off. Mix tortellini pasta with tomatoes and rucola salad. Add in some olive oil and balsamic vinegar and mix well. Season well with salt and pepper and serve with grated parmesan cheese.
