Veggie Quiche

Loads of fresh veggies on a crispy crust - this delicious quiche recipe is all you need! Be creative and try all your favourite veggies with this heavenly quiche recipe.

Ingredients
200g all purpose flour
100g butter (from the fridge)
3 Eggs
1 green zucchini
1 yellow zucchini
4 large carrots
1 large red pepper
250g heavy sour cream
100g grated mozzarella
a pinch of nutmeg
salt, pepper
Zubereitung
Mix flour and a pinch of salt in a bowl. Add butter in pieces, 2 tbsp. cold water and 1 egg and quickly work into a smooth dough with your hands. Wrap up dough in plastic wrap and let rest in fridge for at least 30 minutes.
Roll out the dough on a flour dusted surface. Transfer the dough into the tarte tin and press down with your fingers gently.
Heat oven to 160°C. Peel carrots and wash zucchini and pepper thoroughly. Work carrots and zucchini into thin slices, using a potato peeler. Cut pepper into halves, remove stem and seeds and cut into thin slices with a knive. Now transfer veggie slices into the tarte tin - work slices into a helix, change the colors one by one.
Beat up heavy cream with the 2 remaining eggs. Season well with salt, pepper and nutmeg. Fold in mozzarella cheese and pour into the tarte tin - try to push the cheese down the cavities between the veggie slices. Bake in preheated oven for about 1 hour until golden brown.
