Whiskey Tarte with Walnuts & Salted Caramel

Crunchy walnuts, aromatic whiskey and sweet n' salty caramel. This delicious tarte is quick, easy to make and so full of flavours! Best served warm with some vanilla ice cream!

Ingredients
The dough:
200g all purpose flour
1 egg
80g sugar
100g butter
1 tsp. vanilla extract
a pinch of salt
The filling:
200g walnuts
2 eggs
2 egg yolks
2 tbsp. flour
30ml rye whiskey
200g sugar
150ml heavy cream
80g butter
salt
icing sugar for dusting
Zubereitung
Mix flour with salt and sugar in a bowl. Add butter in pieces, vanilla extract and egg and work into a smooth dough with your hands. Add 2 tbsp cold water to the mixture, if dough is too dry. Wrap up in plastic wrap and let rest in the fridge for at least 30 minutes.
In the meantime, chop walnuts roughly. Heat up sugar and heavy cream in a pot. Stir and scrape down sugar from the sides. Let simmer until sugar dissolves. Add butter in pieces and simmer at medium heat until thick and creamy. Stir in 1/2 tsp. salt, set aside and allow to cool off.
Heat oven to 180°C. Roll out dough on a flour dusted surface and transfer to a greased tarte tin. Beat up eggs and 2 tbsp. flour until creamy. Stir in whiskey and mix well. Now fold in salted caramel and chopped walnuts.
Pour filling into the tarte tin and bake in preheated oven for about 35 minutes until golden brown and all set. Allow to cool off completely before removing from the tin. Dust with icing sugar.
