Yoghurt Lemon Cake

Summer, sun, yoghurt lemon cake! This delicious yoghurt lemon cake is super quick and easy to make and so moist and tasty - the perfect cake for a summery afternoon tea or coffee!

Ingredients
280g flour
180g soft butter
150g sugar
juice and peel of 2 lemons
200g greek yoghurt
2 eggs
1 tsp. vanilla extract
2 tsp. baking powder
Method
Beat up eggs, vanilla extract and sugar until creamy. Stir in butter and lemon juice and peel. Mix flour and baking powder and add to the bowl and mix well. Now fold in the yoghurt.
Heat oven to 180°C. Fill the batter into a greased loaf pan and smooth down. Bake in preheated oven for about 45 minutes. Cover with a piece of tin foil after 30 minutes, to avoid the cake to take on too much colour. Allow to cool before removing from the pan.
